Cook the chicken off with salt and pepper.
Brown the onion.
Add minced garlic (4 cloves), minced ginger (1 knuckle), and seasoning. Seasoning should be about 3 tablespoons Garam Masala.
Add 1 large can (14oz) of diced tomatoes.
Add one and a half cups of heavy cream.
Stir. Let simmer and cook.
We already had a lot of rice meals planned this week, so we decided to serve on pasta. But typically, I would serve over rice.
While we were making this, my husband pointed out that we could easily have made this recipe paleo. Simply switch out the heavy cream for coconut milk and swap out the pasta/rice for cauliflower rice (shaved cauliflower).
I think this is one of my new favorites. I even lobbied for it to be on the menu this week...
