The shrimp was coated in chili powder and lime juice and sauteed on the stovetop.
The salads had a homemade pico de gallo (tomato, onion, lime juice, jalapeno, cilantro), a lime-cilantro coleslaw (coleslaw mix, cilantro, lime juice, olive oil), and avocado... all on a bed of mixed greens.
Then the shrimp came off the stove and was placed on the salad. A really simple meal but delicious!

OH MY GOSH. This looks wonderful. I should refrain from visiting your blog when I'm hungry!! I'm going to have to try something like this next time I'm feeling salad!

I don't eat shrimp but I'm sure my husband would love this! I didn't try a new recipe this week but I cooked corn pasta for the first time....interesting...
