shrimp salad

For dinner on Monday night, we made a delicious shrimp salad.  It had a bit of a Mexican flair to it and we were really happy with how it turned out.


The shrimp was coated in chili powder and lime juice and sauteed on the stovetop.


The salads had a homemade pico de gallo (tomato, onion, lime juice, jalapeno, cilantro), a lime-cilantro coleslaw (coleslaw mix, cilantro, lime juice, olive oil), and avocado... all on a bed of mixed greens.

 
Then the shrimp came off the stove and was placed on the salad.  A really simple meal but delicious!

  6. I don't eat shrimp but I'm sure my husband would love this! I didn't try a new recipe this week but I cooked corn pasta for the first time....interesting...
